Being awake in the wee hours of the morning to watch the election results clearly isn't doing my body any good. I finally decided to hit the sack at 4.00am Australia time because the live coverage was starting to piss me off. All thanks to the repeated, crappy and nonsensical ramblings of the newscasters. And of cos, the rather dissapointing results.
Despite being exhausted, I didn't get a single wink of sleep because I was practically tossing and turning the whole time. The effects of the strong coffee I had the night before took so long to wear off. I am never ever taking any coffee at that time of the night again!! Tired Body versus Active Mind......not good!!
But on the flipside, I woke up with this sudden and strong urge to cook something. Weird...no?? I frisked through my fridge and freezer and decided to make some Chicken Wontons.
GREAT.....trust myself for thinking of something so tedious to make. But, I have got a bunch of spring onions that had to be used before they started wilting. So, that's my main excuse.

Today's mission started out with defrosting the Chicken Mince - which took forever since I didn't take it out of the freezer early enough.......
Followed by the seemingly-endless amount of chopping of Dried Mushrooms, Wombok (i.e. Chinese Cabbage) and Spring Onions.
Followed by putting all the above ingredients together.
Added some seasoning into the mixture - Ginger, Light Soya Sauce, Sesame Seed Oil, Chilli Oil and last but not least, Salt and Pepper to taste.
Then, mixing it well and letting it sit for a couple of hours.
And since I am a bit lazy, I used this pre-made Egg Pastry...my life made easy.
I moulded the Wontons into 'Nurse-Caps' for aesthetic sake. And they are all ready to be fried or boiled according to preference.
I'm happy. My tummy's happy. All hard work paid off.
